We enjoy our Isle of Barra Oysters in lots of ways, we absolutely love their fresh, clean taste when we eat them straight from the shell, however, we realise that this is not how everyone likes to eat them and would like to encourage you to try oysters in a variety of ways as well as the traditional au natural way.
Always Oysters - Oysters All Ways
BAKED:
Add the ingredients below, finely chopped, to a shucked oyster and place under a medium grill or microwave.
Rockefella - Smoked Bacon, tomato & smoked cheese.
Italiano - melted butter and parmesan cheese.
Hollandia - caramelised onions, Gouda cheese and tabasco.
Key West - garlic butter, lime juice and blue cheese.
Barra - diced shrimp, mushroom, garlic, onion and cheddar.
Kilpatrick - bacon, parsley and worcestershire sauce.
CHILLED:
Sashimi - soy sauce, wasabi and ginger.
Nobu - chopped red onion, cucumber, mint and soy sauce.
Hebridean - a dash of a good dry white wine / champagne and tabasco.
BBQ
Place oysters on a BBQ or under a very hot grill and as soon as the shells just open take them off/ out and prise them fully open, being careful not to burn yourself please!
Then serve with the normal accompaniments - lemon/tabasco/red wine and shallots/ wasabi mayonnaise/ lemon and fresh black pepper, your oyster will be warm and beautifully poached and if you get the timing right it should still be deliciously juicy.
